Production process
The production process is divided into three stages. It begins with the wine processing phase, which involves selecting wines that are as neutral as possible to better blend with the herb and spice extracts with which they will be mixed. This is followed by the botanicals processing stage, using herbs that are partly local (such as wormwood, centaury, sweet and bitter orange…) and partly of exotic origin (cinnamon, sandalwood, cloves, nutmeg, cinchona bark…), from which a liquid of approximately 30% ABV containing the active ingredients of the botanicals is then extracted. The process concludes with the finishing of the final product, which involves blending the fortified wine, sugars, and extracts, followed by filtration and aging in tanks. Upon completion of the production process and the evaluation of the product’s characteristics, bottling takes place.
