Production process
The production process is divided into three stages. It begins with the selection of white wines with a neutral profile, allowing them to integrate with the herbal and spice extracts used in the blend. The second stage focuses on the botanicals, combining locally sourced ingredients—such as wormwood, yarrow, sweet and bitter orange—with more exotic spices, including cinnamon, sandalwood, cloves, nutmeg and cinchona bark. These are macerated to obtain an alcoholic extract rich in their aromatic and flavourcompounds. The final stage involves blending the fortified wine with sugar and the botanical extracts, followed by filtration and maturation in stainless steel tanks. Once the vermouth has reached its desired quality and sensory profile, it is bottled.
