Vinification
Gentle pressing of the grapes is carried out using the historic Marmonnier press at the Gancia cellars. Each fraction of the pressed grapes is fermented in both barriques and stainless-steel tanks under controlled temperatures. The wines remain on their lees for over six months before being blended into the grand cuvée, which undergoes fermentation with the addition of selected yeasts chosen by Gancia’s cellar masters.
Production process
Produced according to the Traditional Method, the secondary fermentation lasts approximately 40 days, after which the sparkling wine rests for at least 120 months in the cool, temperature-controlled Gancia cellars.
