Once the grapes have reached the right level of ripeness, the Glera grapes are harvested and taken to the winery where, after destemming and gentle pressing, they are placed in a soft press and undergo classic white winemaking at a controlled temperature, to preserve the primary aromas until the secondary fermentation. Special attention is paid to fermentation temperatures, to enhance the aromatic characteristics to the fullest.
